Breakfast Pizza for Cave People


It seems everywhere I go people are getting on the  clean, green, paleo, natural, sugar free, grain free, gluten free, pasture raised food train. David and I just call it the health train and the mantra is moderation. It is so strange how even healthy can get boring...so we spiced it up one night and made breakfast for dinner and pizza for breakfast. I made paleo friendly breakfast pizza and it was delicious-i-o-so. It was paleo-tastic with a side of awesome-sauce. To make this amazing breakfast pizza I first gathered up the ingredients. (You may notice a slight obsession to Sprouts Grocer) 



Shopping List
  
1 can of Full Fat Coconut Milk 
1 Cup of Coconut flour
1 TSP of baking soda 
2 cups of fresh spinach 
1-2 tomatoes
2 green onions stalks
half dozen eggs 
1/2 TBS of cooking butter/oil

Directions:
Once your ingredients are gathered you are free to start cooking. The process is fairly simple and feel free to break the rules.

Preheat oven to 370 degrees. Mix coconut milk and flour together in a mixer until smooth. Add it 3 eggs and baking soda and continue to mix until well blended. When you are good and mixed, transfer mixture to greased baking sheet or pizza stone. Use a spatula to smooth out the mixture. Pop it in the oven for 20 minutes.


 

While you are baking you can prep the toppings. Feel free to be creative here and sautee up any veggies you want on your pizza. You will want to start with the spinach. Heat butter/oil in a pan warm. Add spinach and lightly sautee. (This will only take a few minutes). Transfer cooked spinach to a paper towel to remove any excess moisture. When your crust is ready you can add your pizza toppings.





Add sliced tomatoes, spinach, onions. Carefully crack eggs onto your pizza. Put your pizza back into the oven for an additional 15 minutes or until eggs whites are cooked through.







When your oven timer goes off (Ding!) remove your pizza and enjoy hot! (We were so excited to eat it that we forgot to take a final picture, I assure you it looked delicious!)
